Data logging a varying frequency signal

I am building an inertial motorcycle dyno.
Initially I will measure roller and engine rpm.
I have a Pico ADC-100 2 channel unit.
Seems to me that the only way I can log a variable frequency voltage input (toothed wheel and inductive sensor for roller, tacho output from ignition for engine rpm) is by converting frequency to a voltage analogue signal, and then logging this. Am I right? A fixed period sample on a variable frequency input suggests to me that the leading edge of my input signals will be missed.
Certainly the maths on an analogue input will be easier - no differentiation required. Plus a lower sample rate will probably suffice.
Someone out there will have dealt with this problem - your advice appreciated.
